Coquitos

This traditional dessert from Venezuela is consumed in other Latin American countries, such as Colombia, Puerto Rico, Cuba and Brazil. It is a kind of sweet and smooth cookie with a lot of coconut flavor and various spices (cinnamon, cloves, ginger). The first traces of making this recipe date back to the late 1700s when breads and cakes began to be prepared with wheat flour.

1. Ingredients:

  • 350 g of the pulp of a coconut
  • 2 cups of wheat flour
  • 1 pinch of salt
  • 300 g of shredded paper
  • ¼ cup of water
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • 2 butter spoons
  • 2 teaspoons of baking soda
  • 2 eggs

2. Necessary utensils:

Canvas, spoon, saucepan, wooden spoon, refractory container, electric rods, spatula, baking tray and a grater.

3. Preparation:

  • Turn the oven to 180 ° C. With a canvas or cloth, squeeze the pulp from the coconut, thus removing all the excess moisture. Mix with the flour and salt. Reservation.
  • Over medium heat, melt the paper with a little water until you get a thick syrup. Add all the sweet spices and mix using a wooden spoon. When you turn off the heat, add the butter  so that it melts. Transfer to a refractory container and let it cool.
  • When it has cooled down, add the baking soda. You will have something sparkling and clear. Let stand.
  • Beat the eggs. First the white until frothing and then the yolk. Finish beating with the electric rods and place in the syrup or syrup.
  • Add the dry ingredients to the previous preparation and stir well using a spatula or wooden spoon. Let it rest for half an hour.
  • Grease a baking sheet and put parchment paper. With a spoon, place circles well loaded with dough. Do not forget to leave a space between each one so that they do not stick together as they grow.
  • Put on the highest tray of the oven and cook 25 minutes. Check that they are ready by inserting a toothpick in the center of some of them. If it comes out dry and clean then it means that you have to remove them from the oven. Place on a rack to cool. And to enjoy!
